Pork and Spring Vegetable Stir-fry with Rice
A vibrant and quick stir-fry featuring lean pork tenderloin and crisp spring vegetables like bell peppers, carrots, and cabbage, seasoned with ginger, garlic, and soy, served over fluffy rice.

- Bell Pepper75 g
- Carrots50 g
- Garlic1 clove
- Spring Onion1 stalk

- Sesame Oil7.5 ml
- Pork Tenderloin200 g
- Cabbage75 g
- Soy Sauce15 ml
- Ginger5 g
Instructions

1. Cook rice according to package instructions. (Start this first, as it's the longest step).

2. While rice cooks, thinly slice the pork tenderloin into strips. Mince ginger and garlic. Slice bell pepper, carrots, and cabbage into thin strips. Chop spring onions for garnish.

3. Heat 10ml of sesame oil in a large skillet or wok over medium-high heat. Add pork and stir-fry for 3-5 minutes until cooked through and lightly browned. Remove pork from the skillet and set aside.

4. Add the remaining 5ml of sesame oil to the skillet. Add minced ginger, garlic, bell pepper, and carrots. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

5. Add cabbage and cooked pork back to the skillet. Pour in soy sauce. Stir-fry for another 1-2 minutes until cabbage wilts and everything is well combined.
