Pork loin200 g
Cabbage275 g
Apple135 g
Onion68 g
Olive oil10 ml
Vegetable broth75 ml
Apple cider vinegar5 ml
Caraway seeds1 g
Salt1.5 g
Black pepper0.5 g

Instructions

Slice the pork loin into 2 cm thick medallions (3 minutes). Thinly slice the cabbage and onion (4 minutes). Core and slice the apple (2 minutes).

Heat the olive oil in a large skillet or Dutch oven over medium-high heat (1 minute). Season the pork medallions with salt and pepper. Sear the pork for 2-3 minutes per side until golden brown. Remove pork from the skillet and set aside (3 minutes).

Add the sliced onion to the skillet and sauté for 3 minutes until softened. Add the sliced cabbage and caraway seeds, sauté for another 3 minutes (6 minutes).

Pour in the vegetable broth and apple cider vinegar. Bring to a simmer, then return the pork medallions to the skillet. Add the sliced apple around the pork (2 minutes).

Cover the skillet and reduce heat to medium-low. Simmer for 7 minutes, or until the pork is cooked through and the cabbage is tender. Stir once or twice (7 minutes).

Serve immediately, ensuring each plate gets pork, cabbage, and apple.
