Pork and Apple Skillet with Braised Cabbage

- Pork loin200 g
- Cabbage275 g
- Apple135 g
- Vegetable broth75 ml
- Caraway seeds1 g
Instructions

Slice the pork loin into 2 cm thick medallions (3 minutes). Thinly slice the cabbage and onion (4 minutes). Core and slice the apple (2 minutes).

Heat the olive oil in a large skillet or Dutch oven over medium-high heat (1 minute). Season the pork medallions with salt and pepper. Sear the pork for 2-3 minutes per side until golden brown. Remove pork from the skillet and set aside (3 minutes).

Add the sliced onion to the skillet and sauté for 3 minutes until softened. Add the sliced cabbage and caraway seeds, sauté for another 3 minutes (6 minutes).

Pour in the vegetable broth and apple cider vinegar. Bring to a simmer, then return the pork medallions to the skillet. Add the sliced apple around the pork (2 minutes).
