New potato250 g
Asparagus200 g
Olive oil20 ml
Parsley5 g

Black pepper0.3 tsp

Instructions

Step 1: Wash and scrub new potatoes. Cut larger ones in half. Steam or boil potatoes for 8-10 minutes until fork-tender.

Step 2: Trim the woody ends off the asparagus. Steam or blanch for 3-5 minutes until bright green and crisp-tender.

Step 3: Pat chicken breast dry and season with salt and pepper. Heat 10ml olive oil in a non-stick pan over medium-high heat. Sear chicken for 4-5 minutes per side, until golden brown and cooked through.

Step 4: Toss cooked potatoes and asparagus with remaining 10ml olive oil, chopped parsley, salt, and pepper. Serve alongside the pan-seared chicken.
