Pečena Postrv z Beluši in Mladim Krompirjem (Pan-Seared Trout with Asparagus and New Potatoes)
A classic Slovenian-inspired dinner featuring succulent pan-seared trout, paired with fresh, seasonal asparagus and tender new potatoes, seasoned with garlic and parsley.
Ingredients
- Garlic5 g
- Olive Oil25 ml
- Lemon10 ml
- Salt2 g
- Black Pepper1 g
- Trout Fillet250 g
- Asparagus150 g
- New Potatoes300 g
- Fresh Parsley5 g
Instructions

Wash new potatoes and cut larger ones in half. Place in a pot with cold salted water, bring to a boil, and cook for 10-12 minutes or until tender. Drain well.

While potatoes cook, trim the woody ends off the asparagus. Steam the asparagus for 5-7 minutes until tender-crisp. Mince the garlic. Pat the trout fillet dry and season both sides with salt and pepper.

Heat olive oil in a non-stick pan over medium-high heat. Add trout, skin-side down (if applicable), and cook for 4-5 minutes until skin is crispy. Flip and cook for another 3-4 minutes, or until cooked through. Remove trout and set aside.

Serve the pan-seared trout with boiled potatoes and steamed asparagus. Garnish with minced garlic, fresh chopped parsley, and a squeeze of fresh lemon juice.
