Pan-Seared Turkey Cutlets with Roasted Brussels Sprouts

- Black pepper2 g
- Turkey breast300 g
- Brussels sprouts400 g
- Smoked paprika2 g
Instructions

Preheat oven to 200°C. Trim the ends off the Brussels sprouts and halve any larger ones. (3 minutes)

In a bowl, toss the Brussels sprouts with 20 ml of olive oil, 1.5 g of salt, 1 g of pepper, and the smoked paprika. Spread them in a single layer on a baking sheet. (3 minutes)

Roast the Brussels sprouts for 18 minutes, flipping halfway through, until tender and slightly browned. (18 minutes)

While the sprouts are roasting, slice the turkey breast into 1.5-2 cm thick cutlets. Pat them dry. Season both sides with the remaining 1.5 g salt and 1 g pepper. (2 minutes)

Heat the remaining 20 ml of olive oil in a large skillet over medium-high heat. Add the turkey cutlets and sear for 6 minutes per side, or until cooked through and golden brown. (12 minutes - 6 mins per side)
