Pan-Seared Trout with Sautéed Potatoes and Leeks
Flavorful pan-seared trout, a local Slovenian favorite, paired with tender sautéed potatoes and sweet leeks. A light and satisfying meal perfect for a winter evening.
Ingredients

- Olive Oil7.5 ml
- Lemon0.5 pcs
- Trout300 g
- Potatoes200 g
- Leeks100 g
- Dill2 g
Instructions

Thinly slice 400g of potatoes into rounds or half-moons (3 minutes). Thinly slice 200g of leeks (white and light green parts) (2 minutes). Mince 10g of garlic (1 minute). Pat 600g of trout fillets dry (1 minute).

Heat 15ml of olive oil in a large non-stick pan over medium-high heat (1 minute). Add the sliced potatoes and sauté, stirring occasionally, until tender and lightly browned (5 minutes). Add the sliced leeks and minced garlic, continue to sauté until leeks are softened (1 minute). Season with salt and pepper.

While potatoes and leeks are cooking, season the trout fillets with salt and pepper. Add them to a separate hot pan or clear space in the same pan with a little more oil if needed. Sear for 3-4 minutes per side, depending on thickness, until cooked through and flaky (7 minutes).

Serve the pan-seared trout alongside the sautéed potatoes and leeks. Squeeze fresh lemon juice over the fish and garnish with fresh dill.
