Pan-Seared Trout with Roasted Asparagus and New Potatoes

- Pepper1 pinch
- Trout Fillet231 g
- New Potatoes184.8 g
- Asparagus115.5 g
- Dill1 sprig
Instructions

Step 1: Preheat oven to 200°C (390°F). Wash and halve new potatoes. Toss with a drizzle of olive oil, salt, and pepper. Place on a baking sheet and roast for 10 minutes.

Step 2: While potatoes roast, wash asparagus and snap off woody ends. Toss with a drizzle of olive oil, salt, and pepper. Add to the baking sheet with potatoes for the last 8 minutes of roasting.

Step 3: Pat trout fillets dry with paper towels. Season both sides with salt and pepper. Heat remaining olive oil in a non-stick pan over medium-high heat. Sear trout fillets, skin-side down, for 3-4 minutes until skin is crispy. Flip and cook for another 2-3 minutes until cooked through.
