Pan-Seared Steak with Garlic Herbs, Roasted Green Beans, and Rice

Ingredients (Serves 2)

sirloin steak (raw)451 g
dry rice115 g
green beans240 g
olive oil36.5 ml
garlic8 g
fresh rosemary5 g
fresh thyme5 g
salt3 g
black pepper2 g

Instructions

Cook the dry rice according to package instructions. Keep warm.

Preheat oven to 200°C (400°F). Trim the ends of the green beans.

In a bowl, toss the green beans with 10ml of olive oil, salt, and pepper.

Spread the green beans in a single layer on a baking sheet. Roast for 15-20 minutes, or until tender-crisp and slightly browned.

Pat the sirloin steak dry with paper towels. Season generously with salt and black pepper.

Mince the garlic and chop the fresh rosemary and thyme.

Heat the remaining 26.5ml of olive oil in a heavy skillet (like cast iron) over medium-high heat until shimmering.

Carefully place the steaks in the hot skillet. Sear for 3-5 minutes per side for medium-rare, or to your desired doneness. (Adjust time for thickness).

During the last 1-2 minutes of cooking, add the minced garlic, fresh rosemary, and thyme to the skillet. Spoon the oil/herb mixture over the steaks.

Remove steaks from the pan and let rest on a cutting board for 5-10 minutes before slicing against the grain.

Serve the sliced steak alongside the roasted green beans and cooked rice. Spoon pan juices over the steak if desired.
