Instructions

Pat the steaks dry thoroughly with paper towels. Season generously with salt and black pepper on both sides. Allow to sit at room temperature for at least 15 minutes while preparing other components.

For the garlic herb butter: Mince the garlic cloves and finely chop the fresh parsley. In a small bowl, combine the softened butter with minced garlic and chopped parsley. Mix well. Set aside.

Trim the ends of the green beans. Slice the almonds thinly.

Heat a large, heavy-bottomed skillet (cast iron works best) over high heat until smoking lightly. Add 5ml of olive oil to the hot pan. Carefully place the seasoned steaks in the skillet.

Sear the steaks for 3 minutes per side for medium-rare, or longer for desired doneness (total 6 minutes searing). For a perfect crust, do not move the steaks during searing.

While steaks are searing, in a separate medium skillet, add the remaining 5ml of olive oil. Add the green beans and sauté over medium-high heat for 8-10 minutes until tender-crisp and slightly charred. Add the sliced almonds during the last 3 minutes of cooking and toss until lightly toasted. Season with salt and pepper.

Once steaks are seared, remove them from the skillet and place them on a cutting board. Immediately top each steak with a generous dollop of the garlic herb butter. Tent loosely with foil and let rest for 5-7 minutes. This allows the juices to redistribute for a tender, flavorful steak.

Slice the rested steak against the grain into thick slices. Serve immediately with the sautéed green beans and toasted almonds. Spoon any melted garlic herb butter from the cutting board over the steak.
