Pat the steaks dry thoroughly with paper towels. Season generously with salt and black pepper on both sides. Allow to sit at room temperature for at least 15 minutes while preparing other components.

For the garlic herb butter: Mince the garlic cloves and finely chop the fresh parsley. In a small bowl, combine the softened butter with minced garlic and chopped parsley. Mix well. Set aside.
