Pan-Seared Sirloin Steak with Spicy Quinoa and Broccoli Stir-fry

- Dry quinoa120 g
- Broccoli florets200 g
- Bell pepper (any color)100 g
- Onion100 g
- Garlic2 cloves

- Sirloin steak (raw weight)500 g
- Water or vegetable broth240 ml
- Chili powder3 g
- Cumin2 g
- Smoked paprika2 g

Instructions

Rinse the quinoa under cold water. Combine quinoa and water or vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.

While quinoa cooks, pat the sirloin steak dry. Slice the steak against the grain into thin strips or cubes.

Dice the bell pepper and onion. Mince the garlic.

Heat half of the olive oil (10ml) in a large skillet or wok over high heat. Add the steak strips and sear quickly on all sides until browned. Remove steak from the skillet and set aside.

Add the remaining olive oil (10ml) to the same skillet. Add the broccoli florets, diced bell pepper, and onion. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
