Pan-Seared Sirloin Steak with Spicy Quinoa and Broccoli Stir-fry

Ingredients (Serves 2)

Sirloin steak (raw weight)500 g
Dry quinoa120 g
Water or vegetable broth240 ml
Broccoli florets200 g
Bell pepper (any color)100 g
Onion100 g
Garlic2 cloves
Olive oil20 ml
Chili powder3 g
Cumin2 g
Smoked paprika2 g
Salt1.5 g
Black pepper0.5 g
Lime0.5 pcs

Instructions

Rinse the quinoa under cold water. Combine quinoa and water or vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.

While quinoa cooks, pat the sirloin steak dry. Slice the steak against the grain into thin strips or cubes.

Dice the bell pepper and onion. Mince the garlic.

Heat half of the olive oil (10ml) in a large skillet or wok over high heat. Add the steak strips and sear quickly on all sides until browned. Remove steak from the skillet and set aside.

Add the remaining olive oil (10ml) to the same skillet. Add the broccoli florets, diced bell pepper, and onion. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Add the minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper to the vegetables. Stir-fry for 1 minute until fragrant.

Return the seared steak to the skillet with the vegetables. Add the cooked quinoa.

Squeeze the juice from half a lime over the stir-fry. Toss everything together to combine and heat through.

Serve the steak and quinoa stir-fry immediately.
