Pan-Seared Sirloin Steak with Sautéed Kale and Creamy Sweet Potato Mash

Ingredients (Serves 2)

Sirloin Steak210 g
Sweet Potato175 g
Kale100 g
Garlic1 clove
Olive Oil0.5 tbsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Peel and dice sweet potato into 1-inch cubes. Place in a microwave-safe bowl with 2 tablespoons of water, cover, and microwave on high for 5-7 minutes until very tender. Mash with a fork until smooth; season with a pinch of salt and pepper.

Pat steak dry with paper towels. Season generously with salt and pepper on both sides.

Heat 0.5 tablespoon of olive oil in a cast-iron or heavy-bottomed skillet over medium-high heat until shimmering and almost smoking.

Carefully place steak in the hot skillet. Sear for 3-4 minutes per side for medium-rare, or adjust to your preferred doneness. Remove steak from pan and let rest on a cutting board.

While steak rests, add remaining 0.5 tablespoon of olive oil to the same skillet. Add minced garlic and sauté for 30 seconds until fragrant. Add kale and cook, stirring occasionally, until wilted and tender, about 3-5 minutes.

Slice the rested steak against the grain. Serve immediately with the sweet potato mash and sautéed kale.
