Pan-Seared Sirloin Steak with Roasted Broccoli and Quinoa

Ingredients (Serves 2)

Sirloin steak360 g
Broccoli florets400 g
Dry quinoa120 g
Olive oil20 ml
Garlic4 cloves
Fresh rosemary sprig1 pcs
Fresh thyme sprig1 pcs
Salt3 g
Black pepper2 g
Water or vegetable broth (for quinoa)240 ml

Instructions

Preheat oven to 200°C (400°F).

Rinse the quinoa under cold water. Combine dry quinoa and water/broth in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed and quinoa is fluffy. Let stand covered for 5 minutes, then fluff with a fork.

Toss broccoli florets with 10 ml of olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender and slightly browned.

Pat the sirloin steaks dry with paper towels. Season generously with salt and black pepper.

Heat the remaining 10 ml of olive oil in a cast iron skillet or heavy-bottomed pan over medium-high heat until shimmering.

Add the steaks to the hot pan along with smashed garlic cloves, rosemary, and thyme sprigs. Sear for 3-5 minutes per side for medium-rare, or to your desired doneness, basting with the pan juices and aromatics.

Remove steaks from the pan and let rest on a cutting board for 5-10 minutes before slicing.

Serve sliced steak alongside roasted broccoli and a portion of the fluffy quinoa. Drizzle with pan juices if desired.
