Shrimp200 g
Chickpeas200 g
Cherry Tomatoes200 g
Spinach100 g
Red Onion50 g
Garlic3 cloves
Olive Oil1.5 tbsp
Fresh Parsley10 g
Dried Oregano0.5 tsp
Lemon0.5 pcs
Red Pepper Flakes0.3 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Pat the shrimp dry and season with salt and black pepper.

Halve the cherry tomatoes. Finely chop the red onion, garlic, and fresh parsley.

Heat the olive oil in a large skillet or pan over medium-high heat.

Add the chopped red onion and garlic to the skillet and sauté for 2-3 minutes until fragrant.

Add the halved cherry tomatoes, rinsed and drained chickpeas, dried oregano, and red pepper flakes to the skillet. Cook for 3-4 minutes, stirring occasionally, until tomatoes begin to soften.

Stir in the fresh spinach and cook until just wilted, about 1-2 minutes.

Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.

Remove from heat. Squeeze fresh lemon juice over the skillet and stir in the chopped fresh parsley.

Serve hot directly from the skillet.
