Ingredients (Serves 2)

Pork tenderloin300 g
Cabbage300 g
Apple150 g
Onion100 g
Olive oil20 ml
Apple cider vinegar20 ml
Caraway seeds1 g
Salt2 g
Pepper1 g

Instructions

Slice the pork tenderloin into 1-2 cm thick medallions. Season generously with salt and pepper (3 minutes).

Thinly slice the cabbage, onion, and apple (7 minutes).

Heat olive oil in a large skillet over medium-high heat. Add the pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through. Remove pork from skillet and set aside (8 minutes).

Add the sliced onion to the same skillet and sauté until softened, about 3-4 minutes (4 minutes).

Add the sliced cabbage, apple, and caraway seeds to the skillet. Cook, stirring occasionally, until the cabbage is slightly tender, about 5-7 minutes (7 minutes).

Pour in the apple cider vinegar and scrape up any browned bits from the bottom of the pan. Cook for 1 minute more (1 minute).

Return the pork medallions to the skillet and toss gently to combine with the cabbage and apple mixture. Serve immediately (1 minute).
