Pan-Seared Pork Tenderloin with Roasted Asparagus & Potatoes
Succulent pan-seared pork tenderloin paired with tender roasted asparagus and small potatoes, seasoned with garlic and paprika.

- Potato200 g
- Asparagus200 g
- Paprika0.5 tsp
Instructions

Preheat oven to 200°C (390°F) if roasting, or prepare to pan-fry/boil potatoes.

Wash and scrub potatoes, then cut into small 1-inch cubes. Trim woody ends off asparagus. Mince garlic.

Toss potatoes and asparagus with 15ml of olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, or boil potatoes until tender and pan-fry asparagus separately.

Pat pork tenderloin dry and season generously with salt, pepper, and paprika.

Heat the remaining 10ml olive oil in a large skillet over medium-high heat. Sear pork tenderloin for 3-4 minutes per side until golden brown and cooked through (internal temperature 63°C/145°F). Remove from pan and let rest for a few minutes before slicing.
