- Cabbage200 g
- Apple150 g
- Potato200 g
Instructions

Cut the pork tenderloin into medallions about 2 cm thick. Season generously with salt and pepper. Chop the onion and garlic. Thinly slice the cabbage and apple. Dice the potato into small cubes. (8 minutes)

Heat half of the oil (12.5ml) in a large pan over medium-high heat. Add the pork medallions and sear for about 3 minutes per side until golden brown and cooked through. This should take about 6 minutes total. Remove the pork from the pan and let it rest on a plate. (Resting time 5 minutes - included in cookTime)

Add the remaining oil (12.5ml) to the same pan. Add the chopped onion and garlic and sauté for 2 minutes until fragrant. Add the sliced cabbage and potato cubes and cook, stirring occasionally, until the cabbage is tender-crisp and the potatoes are cooked, about 5 minutes. Add the sliced apple and cook for a final 2 minutes until slightly softened. (Total sauté time 7 minutes)
