Pan-Seared Pork Loin with Sautéed Spinach & Sweet Potato

- Chicken Broth50 ml
- Spinach150 g
- Garlic3 g
- Olive Oil15 ml
- Salt1 g
- Black Pepper0.5 g
- Pork Loin200 g
- Sweet Potato175 g
- Rosemary1 g
Instructions

Peel and dice the sweet potato into 1-inch cubes. Place in a microwave-safe bowl with a splash of water, cover, and microwave on high for 5-7 minutes until tender, or boil in a pot of salted water for 10-12 minutes.

While sweet potato cooks, pat the pork loin dry and season generously with salt, black pepper, and rosemary.

Heat 15ml of olive oil in a large skillet over medium-high heat. Add the pork loin and sear for 4-5 minutes per side until golden brown and cooked through (internal temperature 63°C/145°F). Remove from pan, tent with foil, and let rest.

Add the remaining 15ml of olive oil to the same skillet. Add minced garlic and sauté for 30 seconds until fragrant.

Add spinach to the pan in batches if necessary, stirring until wilted. Pour in the chicken broth and cook for 1-2 minutes until liquid is reduced.
