Pan-Seared Pork Loin with Sautéed Cabbage and Potatoes
A hearty and traditional Slovenian-inspired dinner featuring tender pan-seared pork loin complemented by tangy sautéed cabbage and comforting boiled potatoes.

- Olive Oil15 ml
- Apple Cider Vinegar7.5 ml
- Salt0.5 tsp
- Black Pepper0.3 tsp
- Pork Loin175 g
- Potato150 g
- Cabbage200 g
- Caraway Seeds0.5 tsp

Step 1: Peel and dice potatoes into 1-inch cubes. Place in a pot of cold, salted water, bring to a boil, and cook for 8-10 minutes until tender. Drain well.

Step 2: Thinly slice the cabbage and finely chop the onion. Slice the pork loin into 1-inch thick medallions. Season pork with half of the salt and pepper.

Step 3: Heat 15ml of olive oil in a large skillet over medium-high heat. Add pork medallions and sear for 2-3 minutes per side until golden brown and cooked through. Remove pork from skillet and set aside.

Step 4: Add the remaining 15ml of olive oil to the same skillet. Add sliced onion and sauté for 2-3 minutes until softened. Add sliced cabbage, caraway seeds, and the remaining salt and pepper. Sauté for 5-7 minutes, stirring occasionally, until cabbage is tender-crisp. Stir in apple cider vinegar.
