Pan-Seared Pork Loin with Sautéed Apples, Cabbage, and Lentils

Ingredients (Serves 2)

Pork Loin200 g
Apples150 g
Cabbage150 g
Onion50 g
Olive Oil15 ml
Apple Cider Vinegar7.5 ml
Thyme0 g
Salt0 g
Pepper0 g
Lentils100 g

Instructions

Slice the pork loin (400 g) into two equal portions. Season generously with salt, pepper, and thyme.

Slice the apples (300 g) into wedges, thinly slice the cabbage (300 g), and finely chop the onion (100 g).

Heat half of the olive oil (15 ml) in a large oven-safe pan over medium-high heat for 2 minutes.

Sear the pork loin portions for 4 minutes per side until golden brown.

Remove the pork from the pan and set aside to rest.

Add the remaining olive oil (15 ml) to the same pan. Add the chopped onion (100 g) and cook for 3 minutes until softened.

Add the sliced cabbage (300 g) and apples (300 g). Cook, stirring occasionally, for 5 minutes until the cabbage is slightly wilted and the apples are tender.

Pour in the apple cider vinegar (15 ml) and cook for 1 minute, scraping up any browned bits from the pan.

Add the cooked lentils (200 g, rinsed if canned) to the pan with the cabbage and apples and stir to combine for 1 minute until heated through.

Slice the rested pork and serve over the apple, cabbage, and lentil mixture.
