Pat the pork loin dry and season generously with salt and black pepper. Thinly slice potatoes, carrots, and celeriac into bite-sized pieces to ensure quick cooking. Mince garlic.

Heat 10g of olive oil in a large oven-safe skillet or an air fryer at 200°C (390°F) for 2 minutes. Add the sliced root vegetables, garlic, and rosemary sprig. Toss with the remaining 10g of olive oil, salt, and pepper.

If using an oven-safe skillet, place it in a preheated oven at 200°C (390°F) for 15-20 minutes, stirring halfway, until tender and slightly browned. If using an air fryer, cook for 15-18 minutes, shaking the basket every 5 minutes.

While vegetables cook, heat a separate pan over medium-high heat. Add the seasoned pork loin and sear for 4-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 63°C/145°F). Let rest for a few minutes before slicing.
