Pan-Seared Pork Loin with Roasted New Potatoes and Green Beans

- Salt1 pinch
- Black Pepper1 pinch
- Pork Loin220 g
- New Potatoes280 g
- Green Beans150 g
- Fresh Dill5 g
Instructions

Preheat oven to 200°C (390°F). Wash and halve the new potatoes. Toss them with 5 ml of olive oil, salt, and pepper on a baking sheet. Roast for 12-15 minutes, or until tender and lightly browned.

While potatoes roast, trim the ends off the green beans. Mince the garlic clove. Chop the fresh dill.

Season the pork loin with salt and black pepper. Heat the remaining 5 ml of olive oil in a non-stick skillet over medium-high heat. Once hot, add the pork loin and sear for 3-4 minutes per side, or until golden brown and cooked through (internal temperature 63°C / 145°F). Remove from heat and let rest for a few minutes before slicing.

Steam or boil the green beans for 5 minutes, or until tender-crisp. Drain well. Toss the cooked green beans with minced garlic and chopped fresh dill.
