Pan-Seared Pork Loin with Quick Cabbage and Potatoes

- Potatoes150 g
- Cabbage150 g
- Caraway Seeds1 g
Instructions

Step 1: Thinly slice the pork loin into medallions. Dice potatoes into small cubes (about 1 cm). Shred cabbage thinly. Mince onion and garlic.

Step 2: Place diced potatoes in a small pot, cover with salted water, and bring to a boil. Cook for 5-7 minutes until tender-crisp. Drain well.

Step 3: While potatoes cook, heat 5ml olive oil in a large non-stick pan over medium-high heat. Season pork slices with salt, pepper, and garlic powder. Add pork to the hot pan and sear for 3-4 minutes per side until cooked through and lightly browned. Remove pork and set aside, keeping warm.

Step 4: In the same pan (or another if preferred for speed), add the remaining 10ml olive oil, minced onion, and garlic. Sauté for 2 minutes until fragrant.

Step 5: Add shredded cabbage and caraway seeds to the pan. Sauté for 3-4 minutes until the cabbage is tender-crisp. Add the cooked potatoes to the cabbage mixture and toss briefly to combine.
