Pan-Seared Pork Loin with Braised Cabbage & Apples

- Onion50 g
- Olive Oil7.5 ml
- Apple Cider Vinegar7.5 ml

- Pork Loin175 g
- Green Cabbage200 g
- Apple75 g
Instructions

Step 1: Slice pork loin into 1-inch thick medallions. Season generously with salt and black pepper. Thinly slice the green cabbage. Core and thinly slice the apple. Thinly slice the onion.

Step 2: Heat 10ml of olive oil in a large skillet over medium-high heat. Sear the pork medallions for 3-4 minutes per side, until golden brown and cooked through. Remove pork from skillet and set aside.

Step 3: Add the remaining 5ml of olive oil to the same skillet. Add sliced onion and cook for 2-3 minutes until softened. Add sliced cabbage and apple, chicken broth, and apple cider vinegar. Stir well.

Step 4: Reduce heat to medium-low, cover, and braise for 5-7 minutes, or until cabbage is tender-crisp. Return pork medallions to the skillet for the last minute to warm through. Serve immediately.
