Pan-Seared Pork Loin with Braised Cabbage and Apples

- Apple Cider Vinegar10 ml
- Salt1.5 g
- Pepper0.5 g
- Pork Loin160 g
- Cabbage250 g
- Apple70 g
- Caraway Seeds0.5 g
Instructions

Slice the pork loin into 1.5 cm thick medallions. Thinly shred the cabbage, slice the apple, and finely chop the onion. (5 minutes)

Heat half of the olive oil in a large skillet over medium-high heat. Season the pork medallions with salt and pepper. Sear the pork for 2 minutes per side until golden brown and cooked through. Remove pork from the skillet and set aside. (4 minutes)

Add the remaining olive oil to the same skillet. Add the chopped onion and cook for 1 minute until softened.

Stir in the shredded cabbage, sliced apple, caraway seeds, apple cider vinegar, and a pinch more salt and pepper. Cover and braise for 4 minutes, stirring once, until cabbage is tender. (5 minutes)
