Pan-Seared Local Trout with Sautéed Spinach and Cherry Tomatoes

Ingredients (Serves 1)

Trout Fillet200 g
Spinach200 g
Cherry Tomatoes100 g
Garlic5 g
Olive Oil20 ml
Lemon0.5 pcs
Salt1 g
Pepper0.5 g

Instructions

Pat the trout fillet dry with paper towels and season generously with salt and pepper (2 minutes).

Mince the garlic (1 minute). Halve the cherry tomatoes (1 minute). Wash the spinach if necessary (1 minute).

Heat 10 ml of olive oil in a non-stick pan over medium-high heat (1 minute).

Carefully place the trout fillet skin-side down (if skin-on) or presentation-side down in the hot pan. Sear for 4-5 minutes until the skin is crispy and golden or the first side is browned.

Flip the trout and cook for another 3-4 minutes, or until cooked through and flakes easily with a fork.

While the trout cooks, heat the remaining 10 ml of olive oil in a separate pan over medium heat (1 minute).

Add the minced garlic and cook for 30 seconds until fragrant.

Add the spinach and cherry tomatoes to the pan and sauté, stirring occasionally, until the spinach is wilted and the tomatoes are slightly softened, about 5 minutes.

Squeeze fresh lemon juice over the cooked trout just before serving (1 minute).

Serve the pan-seared trout alongside the sautéed spinach and cherry tomatoes.
