Pan-Seared Lean Pork Loin with Roasted New Potatoes and Radishes

Ingredients (Serves 2)

Pork Loin175 g
New Potato200 g
Radish150 g
Olive Oil5 ml
Garlic Powder0.5 tsp
Dried Rosemary0.5 tsp
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Preheat oven to 200°C (390°F). Wash new potatoes and radishes. Quarter the potatoes and halve the radishes (or quarter if large).

Step 2: In a bowl, toss the potatoes and radishes with 5ml of olive oil, garlic powder, dried rosemary, a pinch of salt, and pepper. Spread in a single layer on a baking sheet.

Step 3: Roast in the preheated oven for 10 minutes. While roasting, prepare the pork.

Step 4: Slice pork loin into 1-inch thick medallions. Season both sides with salt and pepper.

Step 5: Heat the remaining 5ml of olive oil in a skillet over medium-high heat. Once hot, add pork medallions and sear for 3-4 minutes per side, or until golden brown and cooked through (internal temperature of 63°C/145°F).

Step 6: Remove roasted vegetables from the oven. Serve pork medallions immediately with the roasted new potatoes and radishes.
