Pan-Seared Lean Pork Loin with Roasted New Potatoes and Radishes

- Pork Loin175 g
- New Potato200 g
- Radish150 g
- Dried Rosemary0.5 tsp

Step 1: Preheat oven to 200°C (390°F). Wash new potatoes and radishes. Quarter the potatoes and halve the radishes (or quarter if large).

Step 2: In a bowl, toss the potatoes and radishes with 5ml of olive oil, garlic powder, dried rosemary, a pinch of salt, and pepper. Spread in a single layer on a baking sheet.

Step 4: Slice pork loin into 1-inch thick medallions. Season both sides with salt and pepper.
