Pan-Seared Cod with Sautéed Spinach
Flaky pan-seared cod fillets served alongside tender, quickly sautéed spinach, brightened with a touch of lemon and fresh parsley for a light yet satisfying dinner.

- Olive Oil42 ml
- Lemon20 g

- Cod300 g
- Parsley5 g

1. Wash and pat dry 600 grams of cod fillets. Wash 400 grams of fresh spinach. Chop 10 grams of fresh parsley and slice 40 grams of lemon (5 minutes).

2. Heat 40 milliliters of olive oil in a large non-stick pan over medium-high heat. Season the cod fillets on both sides with 2 grams of salt and 0.5 grams of black pepper. Sear the cod for 3 minutes per side, or until cooked through and flaky (6 minutes). Remove cod from the pan and set aside.

3. In the same pan, add the remaining 44 milliliters of olive oil and the spinach. Sauté for 2 minutes, or until wilted. Season with 1 gram of salt and 0.5 grams of black pepper.

4. Serve the seared cod alongside the sautéed spinach. Squeeze lemon juice over the fish and garnish with fresh parsley.
