Cod Fillet200 g
Olive Oil30 ml
Lemon0.5 medium
Fresh Dill5 g
Cherry Tomato150 g
Cucumber100 g
Red Onion30 g
White Wine Vinegar10 ml
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Pat the cod fillet dry with paper towels. Season generously on both sides with salt and black pepper.

Heat 15 ml of olive oil in a non-stick skillet over medium-high heat until shimmering.

Carefully place the cod fillet in the hot skillet. Sear for 4-5 minutes per side, or until golden brown and cooked through (it should flake easily with a fork).

While the fish cooks, prepare the salad: Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.

In a medium bowl, combine the cherry tomatoes, cucumber, and red onion. Chop the fresh dill and add it to the bowl.

In a small bowl, whisk together the remaining 15 ml of olive oil, white wine vinegar, the juice from half a lemon, and a pinch of salt and pepper to create the dressing.

Pour the dressing over the salad ingredients and toss gently to combine.

Once the cod is cooked, transfer it to a plate. Serve immediately with the fresh Mediterranean salad on the side.
