- Cherry Tomato100 g

- Olive Oil1.5 tbsp
- Salt0.5 tsp
- Black Pepper0.3 tsp
- Sweet Potato200 g
- Zucchini150 g
- Dried Herbs1 tsp

Step 1: Pat chicken breast dry and season with half of the salt, pepper, and dried herbs. Dice the sweet potato into 1/2-inch cubes. Slice zucchini and bell pepper. Halve cherry tomatoes.

Step 2: Heat 1 tablespoon of olive oil in a large non-stick pan or cast-iron skillet over medium-high heat. Add the chicken breast and sear for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the pan and set aside.

Step 3: Add the remaining 0.5 tablespoon of olive oil to the same pan. Add the diced sweet potato and cook for 5-7 minutes, stirring occasionally, until slightly tender.
