Ingredients (Serves 1)

Chicken Breast300 g
Sweet Potato200 g
Zucchini150 g
Bell Pepper100 g
Cherry Tomato100 g
Olive Oil1.5 tbsp
Dried Herbs1 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Step 1: Pat chicken breast dry and season with half of the salt, pepper, and dried herbs. Dice the sweet potato into 1/2-inch cubes. Slice zucchini and bell pepper. Halve cherry tomatoes.

Step 2: Heat 1 tablespoon of olive oil in a large non-stick pan or cast-iron skillet over medium-high heat. Add the chicken breast and sear for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the pan and set aside.

Step 3: Add the remaining 0.5 tablespoon of olive oil to the same pan. Add the diced sweet potato and cook for 5-7 minutes, stirring occasionally, until slightly tender.

Step 4: Add the zucchini, bell pepper, and cherry tomatoes to the pan. Season with the remaining salt, pepper, and dried herbs. Sauté for 3-5 minutes until vegetables are tender-crisp.

Step 5: Slice the cooked chicken breast and add it back to the pan with the vegetables. Toss gently to combine. Serve immediately.
