Pan-Seared Chicken with Sautéed Spinach & Garlic Potatoes

Instructions

Step 1: Wash and dice potatoes into small, 1.5 cm (0.6 inch) cubes. Mince garlic. Wash spinach thoroughly.

Step 2: Heat 15ml of olive oil in a large non-stick skillet or pan over medium-high heat. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned.

Step 3: While potatoes cook, slice chicken breast into 1.5 cm (0.6 inch) thick cutlets or strips. Season with salt and black pepper.

Step 4: Push potatoes to one side of the pan. Add the remaining 11.1ml of olive oil to the empty side. Add chicken and pan-sear for 3-4 minutes per side, or until cooked through and golden brown.

Step 5: Add minced garlic to the pan and cook for 30 seconds until fragrant. Add fresh spinach and sauté for 1-2 minutes until wilted. Toss with potatoes and chicken.
