raw chicken breast325 g
cooked rice275 g
fresh spinach150 g
onion50 g
garlic5 g
olive oil17.5 g
salt2 g
black pepper1 g

Instructions

Pat the chicken breasts dry and season generously with salt and black pepper.

Heat half of the olive oil in a large pan or skillet over medium-high heat.

Sear the chicken breasts for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 74°C). Remove chicken from the pan and let rest on a cutting board.

While the chicken rests, add the remaining olive oil to the same pan over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Add the fresh spinach to the pan in batches, stirring until wilted. Season with a pinch of salt and pepper.

Slice the rested chicken breasts.

Serve the sliced chicken alongside the cooked rice and garlic spinach.
