Pan-Seared Chicken with Garlic Pasta and Mixed Vegetables

Ingredients (Serves 2)

raw chicken breast700 g
dry pasta200 g
mixed stir-fry vegetables400 g
onion100 g
garlic20 g
olive oil65 ml
dried Italian herbs5 g
salt5 g
black pepper2 g

Instructions

Bring a large pot of salted water to a boil for the pasta.

While water heats, pat chicken breasts dry and season generously with salt, pepper, and dried Italian herbs.

Finely chop the onion and mince the garlic.

Heat 30ml of olive oil in a large skillet over medium-high heat.

Add chicken breasts and sear for 5-7 minutes per side, until golden brown and cooked through (internal temperature reaches 74°C). Remove chicken from skillet and let rest on a cutting board.

Add pasta to boiling water and cook according to package directions until al dente.

While pasta cooks, add the remaining 35ml olive oil to the same skillet used for chicken. Add onion and cook until softened, about 3-5 minutes.

Add minced garlic and mixed stir-fry vegetables to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.

Once pasta is cooked, drain it, reserving about 100ml of the pasta water.

Add the drained pasta to the skillet with the vegetables. Toss to combine.

If the pasta looks dry, add a splash of reserved pasta water and toss again.

Slice the rested chicken breasts.

Divide the pasta and vegetable mixture between two plates. Top with sliced chicken.

Serve hot.
