Instructions

Step 1: Slice chicken breasts horizontally to create thinner cutlets. Season both sides with salt and pepper. Slice mushrooms, chop onion finely, and mince garlic.

Step 2: Heat half of the olive oil in a large skillet over medium-high heat. Add chicken and sear for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Step 3: In the same skillet, add the remaining olive oil. Add chopped onion and cook until softened, about 2-3 minutes. Add mushrooms and garlic, cook until mushrooms are browned and tender, about 4-5 minutes.

Step 4: Pour in chicken broth and cream. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until sauce slightly thickens. Return chicken to the skillet, coating it in the sauce.

Step 5: Meanwhile, steam green beans until tender-crisp, about 3-5 minutes. Serve chicken with mushroom sauce and steamed green beans. Garnish with fresh parsley.
