Pan-Seared Chicken Breast with Sautéed Zucchini & Corn

Chicken Breast260 g
Zucchini200 g
Corn150 g
Onion40 g
Garlic5 g
Olive Oil18.8 ml
Salt0.8 tsp
Black Pepper0.5 tsp

Instructions

Pat the chicken breast dry and season generously with salt and pepper. Slice the zucchini into half-moons.

Dice the onion and mince the garlic.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Add the chicken breast and sear for 6-8 minutes per side, or until cooked through and golden brown. Remove chicken from the pan and set aside to rest.

Add the remaining 0.5 tablespoon of olive oil to the same skillet. Add diced onion and sauté for 2 minutes until softened.

Add minced garlic, zucchini, and corn kernels to the pan. Sauté for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.

Slice the rested chicken breast and serve immediately with the sautéed vegetables.
