Instructions

Step 1: Pat the chicken breast dry and season with salt and pepper. Peel and dice the potatoes into small, bite-sized pieces. Trim the woody ends off the asparagus and chop the wild garlic.

Step 2: In a large skillet, heat half of the olive oil over medium-high heat for 1 minute. Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until golden and tender-crisp.

Step 3: While potatoes cook, in a separate pan, heat the remaining olive oil over medium-high heat for 1 minute. Add the seasoned chicken breast and sear for 4-5 minutes per side, until cooked through and golden brown.

Step 4: In the pan with the potatoes, add the chopped asparagus and wild garlic during the last 2-3 minutes of cooking. Sauté until asparagus is tender-crisp and wild garlic is fragrant.

Step 5: Serve the pan-seared chicken breast alongside the sautéed potatoes, asparagus, and wild garlic.
