lean beef sirloin/flank steak200 g
sweet potatoes250 g
fresh spinach100 g
garlic8 g
olive oil10 ml
dried herbs (e.g., rosemary, thyme, oregano)1.5 g
salt1 g
black pepper0.3 g

Instructions

Preheat oven to 200°C (400°F).

Peel and dice sweet potatoes into 2-3 cm cubes. Toss with half of the olive oil, half of the dried herbs, salt, and pepper on a baking sheet.

Roast sweet potatoes for 25-30 minutes, flipping halfway, until tender and slightly caramelized.

Pat the beef steaks dry. Season generously with the remaining dried herbs, salt, and pepper.

Heat the remaining olive oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering.

Sear the beef for 3-5 minutes per side for medium-rare, or to your desired doneness.

Remove beef from the pan and let rest on a cutting board for 5-10 minutes before slicing.

While beef rests, add the minced garlic to the same skillet (reduce heat if necessary). Cook for 30 seconds until fragrant.

Add the fresh spinach to the skillet. Cook, stirring, until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.

Slice the rested beef against the grain. Serve sliced beef with roasted sweet potatoes and garlic spinach.
