Pan-Fried Fish with Quick Potato and Kale Hash

Ingredients (Serves 2)

White Fish150 g
Potato200 g
Kale75 g
Onion30 g
Garlic3 g
Oil10 ml
Salt1.5 g
Pepper0.5 g
Lemon15 ml

Instructions

Dice the potatoes into small (approx. 1.5 cm) cubes (5 minutes).

Chop the onion and mince the garlic (3 minutes).

Wash and roughly chop the kale (2 minutes).

Heat the oil in a large non-stick pan or skillet over medium-high heat (1 minute).

Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes until they are browned and tender inside (12 minutes).

While potatoes cook, pat the fish fillets dry and season generously with salt and pepper (2 minutes).

When potatoes are nearly done, add the chopped onion and minced garlic to the pan with the potatoes. Cook for 2-3 minutes until softened (3 minutes).

Push the potato mixture to one side of the pan and add the seasoned fish fillets to the other side. Cook the fish for 3-4 minutes per side, depending on thickness, until opaque and cooked through (8 minutes).

Add the chopped kale to the pan with the potatoes and onion. Cook for 3-5 minutes, stirring occasionally, until the kale is wilted (5 minutes).

Squeeze fresh lemon juice over the fish and hash just before serving (1 minute).

Serve the fish alongside the potato and kale hash.
