Instructions

Preheat your oven to 190°C. This takes approximately 10 minutes.

Wash the courgettes (316g). Cut them lengthwise and scoop out the seeds and some of the flesh, leaving about a 1 cm shell. This takes approximately 5 minutes.

Finely chop the onion (70g) and mince the garlic (5g). Chop the tomatoes (83g). This takes approximately 5 minutes.

Drain and rinse the black beans (53g). This takes approximately 1 minute.

Heat the olive oil (10.5ml) in a large pan over medium-high heat for 1 minute.

Add the ground chicken (316g) and brown, breaking it up, for 6 minutes.

Stir in the chopped onion and minced garlic. Cook until softened, about 4 minutes.

Add the chopped tomatoes, corn (53g), black beans (53g), chili powder (3g), cumin (3g), and salt (1g). Stir to combine.

Reduce heat to low and simmer the filling for 5 minutes.

Spoon the chicken filling into the hollowed-out courgette halves. This takes approximately 3 minutes.

Place the stuffed courgettes in a baking dish. Sprinkle the cheese (53g) over the filling. This takes approximately 1 minute.

Bake for 25 minutes, or until the courgettes are tender and the cheese is melted and slightly golden.
