Onion60 g
Pepper80 g
Zucchini50 g
Rice50 g
Oil8 ml
Lime30 ml
Cumin3 g
Chili Powder3 g
Oregano1 g
Salt1 g

Instructions

Cook the rice according to package directions (start cooking rice now, takes about 15-20 min).

Slice the chicken breast into thin strips (3 min). Slice the onion and pepper into thin strips (5 min). Dice the zucchini (2 min).

In a bowl, toss the chicken strips with half of the oil, lime juice, cumin, chili powder, oregano, salt, and pepper (5 min). Let marinate while you start cooking (minimum 5 min).

Heat the remaining oil in a large pan or skillet over medium-high heat (1 min). Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes.

Remove chicken from the pan and set aside. Add the sliced onion, pepper, and diced zucchini to the same pan. Sauté until vegetables are tender-crisp, about 6-8 minutes.

Return the chicken to the pan with the vegetables and toss to combine (1 min).

Assemble the bowl by placing the cooked rice at the bottom and topping with the chicken and vegetable mixture (1 min).
