Cumin2 g
Paprika2 g
Chilli powder1 g
Salt1 g
Black pepper0.5 g
Rice50 g
Water100 ml
Black bean80 g
Corn50 g
Bell pepper50 g
Red onion30 g
Salsa40 g
Plain yogurt20 g

Instructions

Cook the rice according to package instructions. (Typically, combine rice and water in a small pot, bring to a boil, reduce heat, cover, and simmer for 12-15 minutes).

While rice cooks, slice the chicken breast into thin strips.

In a bowl, toss the chicken strips with olive oil, cumin, paprika, chilli powder, salt, and pepper.

Slice the bell pepper and red onion into thin strips.

Heat a large skillet or pan over medium-high heat.

Add the seasoned chicken strips and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly browned.

Add the sliced bell pepper and red onion to the pan with the chicken.

Cook for another 5-7 minutes, stirring, until the vegetables are slightly softened but still have a bite.

To assemble the bowl, place the cooked rice in the bottom of a bowl.

Top the rice with the chicken and vegetable mixture, black beans, and corn.

Finish with a generous spoonful of salsa and a dollop of plain yogurt.
