Bell Pepper100 g
Onion80 g
Courgettes100 g
Cherry Tomatoes70 g
Olive Oil8 ml
Lime15 ml
Cumin3 g
Chili Powder3 g
Garlic Powder2 g
Oregano1 g
Salt2 g
Pepper1 g
Rice100 g
Water200 ml

Instructions

Cut the beef into 2.5 cm cubes (5 minutes).

In a bowl, whisk together the olive oil, lime juice, cumin, chili powder, garlic powder, oregano, salt, and pepper to make the marinade (3 minutes).

Add the beef cubes to the marinade and toss to coat. Let it marinate at room temperature for at least 30 minutes while you prepare the vegetables (30 minutes marinating time).

Cut the bell pepper, onion, and courgettes into chunks roughly the same size as the beef cubes (7 minutes).

Thread the marinated beef cubes, bell pepper chunks, onion pieces, courgette pieces, and cherry tomatoes onto skewers, alternating ingredients (10 minutes).

Preheat your grill or grill pan over medium-high heat (3 minutes).

While the grill heats, rinse the rice under cold water (1 minute).

In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes (15 minutes). Remove from heat and let stand, covered, for 5 minutes (5 minutes). Fluff with a fork.

Lightly oil the grill or grill pan. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender and slightly charred (15 minutes).

Serve the beef and vegetable skewers immediately with the cooked rice.
