Courgettes150 g
Corn100 g
Bell Pepper50 g
Onion50 g
Olive Oil10 ml
Cumin3 g
Chili Powder3 g
Garlic Powder2 g
Salt2 g
Pepper1 g
Rice80 g
Water160 ml

Instructions

Preheat your oven to 200°C (4 minutes).

Dice the chicken breast into bite-sized pieces (3 minutes).

Slice the courgettes and bell pepper, and chop the onion into similar-sized pieces (5 minutes).

In a medium bowl, combine the diced chicken, sliced vegetables, corn, olive oil, cumin, chili powder, garlic powder, salt, and pepper. Mix well to coat everything evenly (3 minutes).

Spread the chicken and vegetable mixture in a single layer in a baking dish.

Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender (30 minutes).

While the chicken is baking, rinse the rice under cold water (1 minute).

In a small saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes (15 minutes). Remove from heat and let stand, covered, for 5 minutes (5 minutes). Fluff with a fork.

Serve the baked chicken and vegetable mixture alongside the cooked rice.
