Mediterranean Turkey Kofta with Cucumber-Yogurt Sauce and Couscous

Ingredients (Serves 1)

Turkey (ground, lean)220 g
Onion50 g
Cumin (ground)2 g
Coriander (ground)2 g
Salt1 g
Pepper0.5 g
Olive Oil8 ml
Yogurt (Greek style)100 g
Cucumber100 g
Garlic5 g
Dill (fresh)5 g
Lemon Juice5 ml
Couscous40 g
Water60 ml

Instructions

Finely chop the onion and garlic (3 minutes). Finely chop the dill and grate the cucumber (3 minutes). Squeeze excess water from the grated cucumber (1 minute).

In a bowl, combine the ground turkey, chopped onion, cumin, coriander, salt, and pepper. Mix until well combined (2 minutes). Form the mixture into 2-3 oval kofta patties (1 minute).

Heat the olive oil in a skillet over medium-high heat (1 minute). Add the kofta patties and cook for 5-6 minutes per side, until browned and cooked through (12 minutes total cooking time).

While the kofta cooks, make the sauce: In a small bowl, combine the Greek yogurt, grated cucumber, chopped garlic, chopped dill, lemon juice, salt, and pepper. Mix well (2 minutes).

Prepare the couscous: Place couscous in a bowl, pour boiling water over it, cover, and let stand for 5 minutes, then fluff with a fork (5 minutes).

Serve the cooked kofta alongside the couscous and cucumber-yogurt sauce.
