Cooked Quinoa140 g
Cucumber100 g
Cherry Tomato150 g
Bell Pepper112 g
Red Onion40 g

Instructions

Ensure quinoa is cooked and cooled. If using uncooked quinoa, prepare according to package directions (approx. 15 min), doing so concurrently with chicken or beforehand.

Dice the chicken breast. Season with salt and pepper.

Heat a grill pan or skillet over medium-high heat. Cook the diced chicken for 7-10 minutes, stirring occasionally, until cooked through and lightly browned.

Dice cucumber, halve cherry tomatoes, slice bell pepper, and thinly slice red onion. Chop fresh parsley and mint.

In a large bowl, combine the cooked quinoa, grilled chicken, cucumber, cherry tomatoes, bell pepper, and red onion.

In a small bowl, whisk together olive oil, juice from half a lemon, chopped parsley, and chopped mint. Season with salt and pepper.

Pour the dressing over the salad and toss gently to combine. Serve immediately.
