Mediterranean Pasta with Sardines and Sautéed Spinach

Ingredients (Serves 1)

Pasta70 g
Sardines90 g
Olive Oil10 ml
Garlic5 g
Chili2 g
Spinach100 g
Salt1 g
Pepper0.5 g

Instructions

Bring a pot of salted water to a boil for the pasta. This takes about 5 minutes.

While water heats, finely chop the garlic (5 g) and chili (2 g). Wash the spinach (100 g). This takes about 5 minutes.

Cook the pasta (70 g) according to package directions until al dente, typically 8-12 minutes. Drain, reserving about 50 ml of pasta water. This takes about 10 minutes (including cooking time).

While pasta cooks, heat olive oil (10 ml) in a pan over medium heat (1 minute). Add garlic and chili and sauté until fragrant, about 1 minute.

Add the sardines (90 g) to the pan and break them up gently with a fork. Cook for 2 minutes.

Add the washed spinach to the pan and cook until wilted, about 2 minutes.

Add the drained pasta to the pan. Toss to combine. Add a splash of reserved pasta water if needed to create a light sauce (1 minute).

Season with salt (1 g) and pepper (0.5 g) to taste. (1 minute)

Serve immediately. (1 minute)
