Mediterranean Lean Beef and Lentil Sauté with Seasonal Vegetables

Ingredients (Serves 1)

Beef175 g
Lentils175 g
Cauliflower80 g
Broccoli80 g
Carrot35 g
Leek35 g
Olive Oil18 ml
Garlic5 g
Vegetable Broth100 ml
Oregano2 g
Thyme2 g
Lemon Juice10 ml
Salt1 g
Pepper1 g

Instructions

Rinse canned lentils and set aside.

Slice the beef into thin strips. Chop the cauliflower and broccoli into florets, slice the carrot and leek. Mince the garlic (10 minutes).

Heat half of the olive oil in a skillet over medium-high heat.

Add the beef strips and sear quickly until browned on all sides, about 5 minutes. Remove beef from skillet and set aside.

Add the remaining olive oil to the skillet. Add the chopped vegetables (cauliflower, broccoli, carrot, leek) and sauté for about 5 minutes until slightly tender.

Add the minced garlic, oregano, and thyme and cook for 1 minute until fragrant.

Return the beef to the skillet. Stir in the rinsed lentils and vegetable broth. Bring to a simmer and cook for 5 minutes, allowing flavors to meld and vegetables to finish cooking.

Stir in the lemon juice, salt, and pepper. Serve immediately.
