Mediterranean Lean Beef and Lentil Sauté with Seasonal Vegetables
A hearty and quick Mediterranean sauté featuring lean beef strips, protein-rich lentils, and a mix of seasonal Slovenian vegetables like cauliflower, broccoli, and leeks.

- Broccoli80 g
- Carrot35 g
- Garlic5 g
- Olive Oil18 ml
- Oregano2 g
- Lemon Juice10 ml
- Salt1 g
- Pepper1 g
- Lentils175 g
- Cauliflower80 g
- Leek35 g
- Vegetable Broth100 ml
- Thyme2 g
Instructions

Rinse canned lentils and set aside.

Slice the beef into thin strips. Chop the cauliflower and broccoli into florets, slice the carrot and leek. Mince the garlic (10 minutes).

Heat half of the olive oil in a skillet over medium-high heat.

Add the beef strips and sear quickly until browned on all sides, about 5 minutes. Remove beef from skillet and set aside.

Add the remaining olive oil to the skillet. Add the chopped vegetables (cauliflower, broccoli, carrot, leek) and sauté for about 5 minutes until slightly tender.
