- Lemon Juice15 ml

Instructions

Step 1: Rinse quinoa thoroughly. In a small saucepan, combine quinoa with 204ml (approx. 1 cup) water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.

Step 2: While quinoa cooks, dice cooked chicken breast into bite-sized pieces. Halve cherry tomatoes, dice cucumber and bell pepper, and finely chop the red onion. Roughly chop fresh parsley.

Step 3: In a large bowl, combine the cooked quinoa, chicken, cherry tomatoes, cucumber, bell pepper, red onion, and fresh parsley.

Step 4: In a small bowl, whisk together olive oil, lemon juice, a pinch of salt, and black pepper to taste to create the dressing.
