Chicken Breast140 g
Chickpeas100 g
Cucumber80 g
Cherry Tomatoes80 g
Red Onion20 g
Olive Oil1 tbsp
Lemon Juice1 tbsp
Fresh Parsley1 tbsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Slice the chicken breast thinly and season with salt and pepper.

Heat a non-stick pan over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until cooked through. Remove and dice into bite-sized pieces.

While chicken cooks, drain and rinse the chickpeas. Dice the cucumber and cherry tomatoes. Thinly slice the red onion. Chop the fresh parsley.

In a large bowl, combine the diced chicken, chickpeas, cucumber, cherry tomatoes, and red onion.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.

Pour the dressing over the salad ingredients and toss gently to combine. Stir in the fresh parsley and serve immediately.
