Instructions

Dice the chicken breast into bite-sized pieces (3 minutes prep).

Finely chop the onion and garlic (3 minutes prep).

Chop the zucchini and peppers into bite-sized pieces (4 minutes prep).

Heat the olive oil in a large skillet over medium-high heat (1 minute cook).

Add the diced chicken to the hot skillet and sear until browned on all sides (5 minutes cook).

Add the chopped onion, garlic, zucchini, and peppers to the skillet. Sauté, stirring occasionally, until the vegetables are slightly softened (5 minutes cook).

Pour in the canned tomatoes, add the dried oregano, thyme, salt, and pepper (1 minute cook). Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 3 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender (3 minutes cook).
