Ingredients (Serves 1)

Paneer90 g
Onion50 g
Tomato50 g
Ginger5 g
Garlic5 g
Green Chili5 g
Oil10 g
Cumin Seeds2 g
Turmeric Powder2 g
Coriander Powder2 g
Red Chili Powder1 g
Garam Masala2 g
Salt3 g
Cilantro5 g
Water200 ml

Instructions

Step 1: Rinse masoor dal thoroughly under running water. Place dal in a saucepan with 200ml water and a pinch of turmeric. Bring to a boil, then reduce heat and simmer for 10-12 minutes until dal is tender and cooked through.

Step 2: While dal cooks, dice paneer into 1-inch cubes. Finely chop the onion and tomato. Mince ginger, garlic, and green chili.

Step 3: In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter (about 30 seconds).

Step 4: Add chopped onion and sauté for 3-4 minutes until translucent.

Step 5: Add minced ginger, garlic, and green chili. Sauté for 1 minute until fragrant.

Step 6: Stir in chopped tomato, turmeric powder, coriander powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes, mashing tomatoes with the back of a spoon, until the mixture thickens and oil separates.

Step 7: Add the cooked dal to the spice mixture and mix well. Gently add the paneer cubes and simmer for 2-3 minutes, allowing flavors to combine. If needed, add a splash of hot water to adjust consistency.

Step 8: Garnish with fresh cilantro and serve hot.
